48. Sarke-Tagung 1997 in Detmold Vom 23. bis 2s. April 1997 wird in Detmold die 48. Starke- Tagung der Arbeitsgemeinschaft Getreideforschung stattfinden, organisiert in Zusammenarbeit rnit dern Institut fur Starke- und Kartoffeltechnologie der Bundesanstalt fur Getreide-, Kartoffel- und Fettforschung in Detmold und Miinster. Das Tagungsprogramm wird - unter Vorbehalt der endgiiltigen Zusage aller Referenten - Vortragezu den Schwerpunkten Grund- lagen, EigenschafrenlAnwendung, Analytik, Technologie und HydrolyseproduktelEnzymtechnologie enthalten. Eroflnet werden sol1 die Tagung rnit einer umfassenden Dar- stellung iiber aktuelle Vorstellungen und offene Probleme der Starkeforschung. Die Spanne der weiteren Beitrage umfaJt Stu- dien zu Strukturveranderungen mittels Kleinwinkel- und Weit- winkel-Rontgenspektroskopie, zu Monomerbausteinen in Poly- saccharidderivaten, iiber Modellierungen bei einem speziellen Reaktorfur eine chemische Starkemodifizierung, und sodann als Ubergang zum darauffolgenden Schwerpunkt ein Bericht iiber die Bedeutung resistenter Starke im Zusammenhang rnit einer moglichen Entwicklung intestinaler Tumore. Im Schwerpunkt ,,Eigenschaften/Anwendung" werden daran anknupfend zuerst Struktur und Wirkung resistenter Starke auf Kartoflelstarkebasis darge- stellt, bevor neueste Ergebnis- se zur Amylopektinkartoffel- starke vorgestellt werden. Die nachfolgenden Vortrage be- handeln insbesondere neuarti- ge Starkeanwendungen in der SiiJwarenindustrie, in der Waschmittelindustrie und bei der Herstellung eines neuarti- gen thermoplastischen Materi- als auf Starkebasis. Im dritten Schwerpunkt, der ,,Analytik': geht es um die Darstellung der Weiterennvicklung der enzy- matischen Starkebestimmung, um ein neues Konzept der Vis- kositatsmessung bei Starke- Wasser-Systemen sowie um den Nachweis von Acetylstarke als Blutplasmaexpander. Ein spezielles Anliegen dieser Tagung wird die Konzentration auf technologische Probleme sein. Im Zentrum des Interesses ste- hen dabei neue Losungsvorschlage zu verschiedenen Trennver- fahren im Rahmen von NaJvermahlungsprozessen. Es werden aber auch ein neues Konzept zur Nutzung von Weizenmehlen als Rohstofffur die Starkeherstellung oder ein .semi-dry"-Saureab- bau von Starke Bestandteil des Schwerpunktes ,Technologic“ sein. Der letzte Tagungstag sol1 Produkten der Starkehydrolyse, technischen Fortschritten in ihrer Herstellung, insbesondere durch neue Enzymsysteme, vorbehalten sein. The conference will be opened by a general presentation of actual ideas and unsolved problems in the field of starch re- search. The range of following presentations will comprise studies on structural changes of starches by means of small an- gel and wide angel X-ray spectroscopy, on monomer elements in polysaccaride derivatives, on modelling of a speclfic reactor for chemical starch modijkation and in transition to the following topic, on the importance of resistant starch with respect to the possible formation of intestinal tumors. In the section "PropertieslApplication " recent facts concern- ing amylopectin potato starch will be presented first. Thefollow- ing lectures will concentrate on a potato starch based resistant starch as well as on novel starch applications in the con- fectionery industry, in deter- gent manufacture and in the production of a new starch based thermoplastic material. The third section ,,Analytics" is dedicated to statements on developments in enzymatic starch determination, on a new concept of viscosi& meas- urements, and on the proof of acetyl starch as blood plasm expander.
