SPINATKNÖDELDie Zwiebeln und den Knoblauch schälen, kleinschneiden und die Butter dünsten.Den Blattspinat fein hacken, dazugeben und mit Salz, Pfeffer und geriebener Muskatnuss würzen. Den Spinat mit den Eiern in einem Mixer oder einer Moulinette pürieren. Den pürierten Spinat, die Milch, die Käsewürfel und das Mehl, Salz und Pfeffer zum Weißbrot geben und kräfitg durchmischen. Etwa 15 Minuten zugedeckt ruhen lassen. Inzwischen einen großen Topf Wasser zum Kochen bringen. Mit nassen Händen oder einem Löf-fel Knödel formen, die Knödel in das kochende Salzwasser geben und sieden lassen.Die Spinatknödel auf Teller oder einer Servier-platte geben und mit geriebenen Parmesan und mit brauner Butter servieren.

CANEDERLI AGLI SPINACISbucciare le cipolle e l’aglio, tagliarli in piccoli pezzi e sciogliere il burro. Tagliare finemente gli spinaci, unirli al resto e aggiungere sale, pepe e noce moscata. Passare gli spinaci insieme alle uova con un mixer o in una centrifuga. Aggiungere al pane bianco la passata di spinaci, il latte, il formaggio a dadini e la farina, mescolare bene, salare e pepare. Lasciar riposare con coperchio per ca. 15 minuti. Nel frattempo portare all’ebollizione una grande pentola d’acqua. Preparare con le mani umide o con un cucchiaio i canederli, metterli nell’acqua e bollirli. Disporre i canederli agli spinaci su un piatto o un vassoio e servirli con parmigiano grattugiato e burro fuso.

SPINACH DUMPLINGSPeel the onion and the garlic, chop them and braise them in butter. Chop the cooked spinach and add it, then spice it with salt, pepper and nutmeg. Mash the spinach together with the eggs, then add the diced cheese and the milk as well as the bread crumps and some f lour and combine it. Leave the dough covered for about 15 minu-tes. Meanwhile bring water to a boil. Then form dumplings with wet hands or a tablespoon, put them in the boiling water for about 10 minutes. Place the dumplings on a plate or a platter and serve them with brown butter and parmesan cheese.
