Herstellungsverfahren

Das ätherische Bergamottöl wird durch kalte Pressung der äußeren Fruchtschalen der unreifen

Früchte des Bergamottbaumes (Citrus aurantium bergamia) gewonnen. Durch die Nicht-Mischbarkeit

der organischen Bestandteile des ätherischen Öles und des in der Schale enthaltenen Wassers findet

eine spontane Phasentrennung statt, so dass das reine ätherische Öl abgeschieden werden kann. Die

Ausbeute beträgt ca. 0.5%.[1]

Manufacturing method

The essential bergamot oil is obtained by cold pressing of the outer peel of the unripe fruit of bergamot (Citrus

aurantium bergamia). Due to the non miscibility of the organic compounds with water from the peel, the phases

readily separate and the essential oil can be easily separated.The yield reaches up to 0.5%.[1]

Botanischer Ursprung des Bergamottöls

Der Bergamottbaum bildet die Art Citrus Aurantium bergamia in der

Gattung der Zitrusgewächse (Citrus). Diese gehört zur Familie der

Rautengewächse (Rutaceae) in der Ordnung Seifenbaumartige

(Sapindales). Vermutlich ist die Bergamotte aus einer Kreuzung von

Bitterorange (Citrus aurantium) mit der Zitronatzitrone (Citrus medica)

entstanden. Das Verbreitungsgebiet beschränkt sich vornehmlich auf

das südlichste Italien, erweitert sich aber zunehmend auf klimatisch

ähnliche Gebiete am Mittelmeer. Die immergrüne Pflanze erreicht

Wuchshöhen von bis zu 4 m. Die Äste stehen unregelmäßig und

tragen nur selten Dornen. Die Blätter sind dunkelgrün, länglich und

haben einen glatten Rand. Die weißen, wohlriechenden Blüten öffnen

sich am Anfang des Frühjahrs. Die Ernte der birnenförmigen, grün bis

gelben Früchte erfolgt zwischen November und März.[2]

Botanical origin of essential bergamot oil

The species bergamot stands in the genus Citrus, which belongs to the family Rutaceae in the order of

Sapindales. It is believed, that the bergamot is a hybrid of bitter orange (Citrus aurantium) and Citrus medica. It

is native to southern Italy but it is expanding to areas with a similar climate at the Mediterranean Sea. The

evergreen plant reaches heights up to 4 m. The branches stands unregularly and carrying of thorns is rather

seldom. The leaves are dark green in colour, longish with a smooth edge. The white, sweet smelling blossoms

open up at the beginning of spring. Harvesting of the pea-shaped, green to yellow fruits takes place between

November and March.[2]

Charakterisierung

Das ätherische Bergamottöl ist eine leicht bewegliche, gelbe bis bräunliche Flüssigkeit. Durch noch

enthaltenes Chlorophyll aus der Schale können auch grüne Farbtöne enthalten sein. Es hat einen

feinen und lieblichen Duft, mit eindeutig zitronigen Noten. Das ätherische Öl löst sich leicht in

Alkohol (1:2, Ethanol), Pflanzenölen und anderen ätherischen Ölen. Es ist nahezu unlöslich in

Wasser.[3]

Characterisation



The essential bergamot oil is an easily movable, yellow to brownish liquid. Due to remained chlorophyll it

might have some greenish colouring as well. It has a fine and dulcet smell with clearly lemon like notes. The

essential oil is easily soluble in alcohol (1:2, Ethanol), vegetable oils and other essential oils. It is almost not

soluble in water.[3]

Verwendung in der Küche

Das ätherische Bergamottöl ist klassischer und charakteristischer Bestandteil des Aromas von Earl-

Grey-Tee. Es wird auch zur Aromatisierung von Süßwaren, alkoholischen Getränken und Backwaren

verwendet.[1]

Der europäischen Datenbank für Lebensmittelaromen[5] zufolge und in Übereinstimmung mit VO(EU)

No 872/2012, VO(EC) No 2232/96 und VO(EC) No 1334/2008 kann Bergamottöl als Lebensmittelaroma

eingesetzt werden, denn keiner seiner Inhaltsstoffe soll eine Gefahr für die Gesundheit darstellen.

Der Webseite des Bundes für Lebensmittelrecht und Lebensmittelkunde e. V. sollen Aromen lediglich

im Verhältnis 1:1000 dosiert werden, d. h. 1 Gramm Aroma pro Kilogramm Lebensmittel.[6]

Use in kitchen

Essential bergamot oil is the classical and characteristic compound of the flavour of Earl-Grey-Tea. It is used

for flavouring of sweets, alcoholic beverages and bakery products.[1]

According to the European database for food flavors [5], bergamot oil can be used as a food flavor because none of

its ingredients is a danger to health. It can be used in accordance with Regulation No 872/2012, Regulation (EC)

No 2232/96 and Regulation (EC) No 1334/2008.

The website of the Federation of Food Law and Food Science (FDA) is informing that flavors shall be used only

in a ratio of 1: 1000 (1 gram of flavor per kilogram of food). [6]

Arzneiliche Verwendung, Phytotherapie

Für die Anwendung von ätherischem Bergamottöl haben sich eine Reihe von Indikationen im Laufe

der Zeit herausgestellt. Die antiseptischen und schleimlösenden Eigenschaften werden bei

Erkrankungen der Atemwege und Mandelentzündungen genutzt. Es wirkt zudem krampflösend und

verdauungsfördernd, so dass es auch bei Verdauungsstörungen, Koliken und Blähungen eingesetzt

werden kann. Auch bei viralen Hauterkrankungen wie Herpes oder Gürtelrose wird es mit Erfolg

angewandt.[3,4]

Medical use, phytotherapy

There is a row of medical indications, which implies the use of essential bergamot oil. Antiseptic and mucolytic

properties are used at diseases of the respiratory system and tonsillitis. It acts anticonvulsant and digestive, so it

can be used at dyspepsia, colic and flatulence. Even at viral skin diseases, like herpes or herpes zoster, it is used

with success.[3,4]

Aromatherapie



Ätherisches Bergamottöl wird in der Aromatherapie bei Erkrankungen der Seele eingesetzt.

Besonders bei Depressionen, auch durch Lichtmangel verursachter Winterdepression, wirkt sich der

frische, zitrusartige Duft positiv aus. Zudem soll es entspannend auf die Nerven wirken und auch bei

prämenstrualen Beschwerden soll es Linderung versschaffen.[4]

ist auch Bestandteil des Kölnischwasser und wird in vielen Haarpflegemittel eingesetzt.[3]

Use in Cosmetic

Essential bergamot oil is a commonly compound in perfume composition. It brings odour elements for chypre-,

fougère-, flower-, oponax, lavender-, ambra- and phantasy compositions. It is a compound of Eau de cologne and

is used in many hair care products.[3]

Anwendungs- und Warnhinweise, Nebenwirkungen

Einige der Inhaltstoffe von ätherischem Bergamottöl sind als gesundheitlich bedenklich einzustufen.

Die enthaltenen Cumarin-Derivate (z. B. Limettin) können bei oraler Zufuhr in größeren Mengen

Leber-und Nierentoxisch wirken. Die Psoralen-Derivate (z. B. Bergapten, Bergaptol, Bergamottin)

zeigen photosensibilisierende und phototoxische Eigenschaften. Unter Einfluss von UV-Licht (auch

Sonnenlicht) kann es zu Dermatitiden kommen. Auch konnte in Tierversuchen ein karzinogenes und

mutagenes Potential nachgewiesen werden. Der Bergapten-Anteil in Parfümölen soll 75 ppm (ca. 2%

gepresstes Bergamottöl) im fertigen Produkt nicht übersteigen. Bergamottöl enthält potentiell

allergen wirksame Bestandteile wie Linalool, Limonen, Geraniol und Citral.[1,4]

Application and warning notes, side effects

Some of the compounds of essential bergamot oil are categorized as harmful to health. The contained Cumarin

derivatives (limettin) may cause liver and kidney damages when applied oral in greater amounts. Psoralen

derivatives (bergaptene, bergaptol, bergamottine) show photo sensitization and photo toxic effects. Under the

influence of UV light (sun light) sensitive persons might get dermatitis. In animal studies such compounds

showed a carcinogenic and mutagenic potential. The amount of bergapten should be not more than 75 ppm

(about 2% essential bergamot oil) in the final product. Essential bergamot oil contains potential allergic

compounds like linalool, limonene, geraniol and citral,[1,4]

Where the bergapten (5-methoxypsoralen) content of all

relevant oils present in a compound has been determined, it

is recommended that for applications on areas of skin

exposed to sunshine, excluding bath preparations, soaps and

other products which are washed off the skin, the total level

of bergapten in the consumer products should not exceed

0.0015% (15 ppm). This is equivalent to 0.0075% (75 ppm) in

a fragrance compound used at 20% in the consumer product.

Where the level of bergapten has not been determined by

appropriate methods, the limits specified in the guidelines

on individual oils should apply. In those cases, where such



oils are used in combination with other phototoxic

ingredients, the additive effect has to be taken into

consideration and the use levels have to be reduced

accordingly. The sum of the concentrations of all phototoxic

fragrance ingredients, expressed in % of their recommended

maximum level in the consumer product, shall not exceed
